Halloween doesn’t have to mean falling into a major sugar coma. Here is the best gluten-free vegan Halloween cupcake recipe ever, designed specially for our favourite October celebration. Impress party guests with this healthy dessert alternative so you can have your cake and eat it too!

For the cake:
1¼ cups of gluten-free flour (Bob’s Red Mill Gluten-Free Flour is the best)
1/2 cup cocoa powder
1 teaspoon baking powder
3/4 teaspoon baking soda
Pinch of salt
1/2 cup unsweetened coconut milk
1/2 cup water
1 tablespoon white vinegar
1/2 cup organic cane sugar or coconut sugar
1/2 cup organic brown sugar
1/3 cup melted coconut oil
1 1/2 teaspoons pure vanilla extract

For the icing:
1/2 cup coconut oil
3 tablespoons organic non-hydrogenated shortening
3 cups organic powdered sugar
Natural food dye of your choice (orange is obviously good for halloween)
4-6 tablespoons Dairy Free coconut milk coffee creamer (until you get a good icing consistency)
1 teaspoon pure vanilla extract
Drop of coconut extract (optional, for if you want a more coconut flavour)

Baking:
1.Preheat oven to 375 degrees. Line cupcake pans with paper cupcake liners. If you can find them, get Halloween inspired cupcake holders to be extra festive! Sift together flour blend, cocoa powder, baking powder, baking soda and salt. Set aside.

2.In large mixing bowl, stir together coconut milk, water and vinegar. Allow to sit for 1 minute to curdle. Add sugar, oil, and vanilla extract. Slowly whisk in the flour mixture. Beat for 1 minute.

3. Pour batter into prepared cupcake pan. Bake for 16-18 minutes, or until toothpick inserted in center of cupcake comes out clean. Place cupcakes on cooling rack and cool completely.

4. To make buttercream icing, beat together vegan butter with shortening for 1 minute in large bowl of standing mixer. Add powdered sugar, cocoa powder, coffee creamer and vanilla. Beat for an additional 2 minutes.

5. Add 1-2 tablespoons coffee creamer to buttercream, if needed. Continue to beat until light and fluffy.

6. Once your cupcakes have cooled, time to decorate! Make them different colours, add fun Halloween themed toppings and go nuts with the sprinkles. This is your time to let your creativity shine!
